In the crisp New England waters of Narraganset Bay in Rhode Island, there is an aquatic farm where luscious, craft Austrailia virginica oysters are hand raised. West Passage Oyster Co, the outfit responsible for the harvest, is the work of fellow member Justin Farenga and his buddy since way back, Graham Watson.
Justin and Graham were kind enough to show us the operation, so we shot a film to share with you.
At CCC, we believe West Passage's oysters are some of the best we've tried, so we're bringing 1,200 of them to CCC for a day of oysters on the terrace. Justin and Graham will be on hand to shuck and share, and Chef Jesse and the CCC culinary crew will be creating special oyster dishes and pizzas as well.
